Eats - Tea

I drink from 10-12 cups of coffee at work everyday. To kick the caffeine habit, I've been experimenting lately with different varieties of tea from India and China.

Where to buy: I recommend SpecialTeas.com. They've got a good website with color photos of the tea leaves and the resulting brew. Excellent service.

Black Teas
Gopaldhara WT-3 Wonder Tea, Single-Estate Darjeeling Rating: *** The dry leaves themselves smell fantastic, and are full and green when unfurled. Slight muscatel aroma, and lovely flavor. First infusion is the best. 11/01

Vintage Single-Estate Darjeeling
Rating: * I didn't understand this tea at all, and I have a feeling that it was simply too old to brew properly, although this type of tea is supposed to benefit from aging. There was also a sliver of wood in this particular batch from SpecialTeas.com (my vendor of choice, and highly recommended), which is appropriate given that the tea tasted like boiled sawdust. 11/01
Poobong STGFOP1, Single Estate Darjeeling Rating: ** First flush with a nice fruity fragrance. With a flavor boost from a single sugar cube, all the better. 11/02
Meleng FBOP Gold Rain, Assam (Clonal/Special), Single Estate Darjeeling Rating: *** A pretty, golden leaf and a fruitier taste than the first flush Poobong. Infuses extremely quickly. First and second infusions are about the same. 11/02
Nagri FTGFOP, Single Estate Darjeeling Rating:

First flush Darjeeling. Nice, light aroma, but basically tasteless.

I love this tea. It's simply delicious, even more so with sugar (I tend to like my tea sweet). I can't describe the flavor, which is unlike anything I've tasted. It doesn't have the muscatel aroma of Darjeeling or orchid aroma of an oolong; it's something unique. First, second infusions are best. This tea oxidizes quickly. 05/03

Pu-erh Teas
Pu-erh Tuo Cha Rating: **** I thought this would be the silver bullet against my coffee addiction. Pu-erh (or po-lay/bo-lay in Cantonese) is dark, earthy, and doesn't get bitter no matter how long it steeps. I drink this now late at night when I want coffee but can't stay up late. Highly recommended if you like the taste. 06/02

Oolong Teas
Monkey-picked Ti Kuan Yin (Iron Goddess) Rating: *** From China. Huge, full leaves, but not as aromatic or tasty as the Superior Ti Kuan Yin. Second infusion is the best.
Superior Ti Kuan Yin

Rating: **** From China. Broken leaves, but with a toasty aroma and a strong orchid-like taste. Second infusion is better than the first.
Huan Jin Gui Rating: *** From China. Oolong. Tightly packed full leaves, with a taste somewhere between a black tea and an oolong. Aroma is closer to an oolong. 11/02

Green Teas
Pi Lu Chun Superior
(Spring Green Snail)
Rating: ** From China. Again, this is one of the most famous teas in China, but the aroma and taste in this batch was underwhelming. Faint sweet aroma and taste, but nothing defined. I'm hoping to try a better sample from a Chinese tea store soon. 8/02

Fine Lung Ching

A fine, sweet tea, although preparation is a bit tricky. Overbrewing means a harsh, bitter mess. Underbrewing means a lack of flavor. 11/02

Blended Tea
Lapsang Souchong Superior Rating: *** The best lapsang souchong I've tasted although with the same sore throat-inducing effect, so I wouldn't recommend drinking this every day. Incredibly smoky. I'm trying to figure out how to work this into a sauce. 11/02
